Ingredients

For the Roasted Vegetables

  • 1 medium sweet potato, cut into bite-sized pieces

  • ½ cup fennel bulb, sliced

  • 1 small shallot, sliced

  • 3 tablespoons ghee

  • ½ teaspoon ground coriander

  • ½ teaspoon ground cardamom

  • Salt and black pepper, to taste

  • 1 generous handful arugula

  • Fresh fennel flowers, optional, for finishing

For the Ginger Tahini Sauce

  • 2 tablespoons tahini

  • 1 teaspoon ginger syrup

  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F.

  2. Place the sweet potato, fennel and shallot in an oven-safe skillet or baking dish. Add the ghee, coriander, cardamom, salt and black pepper, and toss to coat.

  3. Roast for about 40 minutes, until the sweet potato is nearly tender and the vegetables have browned around the edges.

  4. Toss in the generous handful of arugula and return the skillet to the oven for the final 5 minutes. The total roasting time is about 45 minutes; the sweet potato should be tender and the arugula wilted.

  5. While the vegetables roast, stir together the tahini, ginger syrup and lemon juice.

  6. Serve the roasted vegetables warm with the ginger tahini sauce spooned over them or alongside. Finish with fresh fennel flowers, if you have them.

A dinner for one turned into something that felt like dessert. Sweet potato, fennel and shallots roast in ghee with coriander and cardamom, becoming tender with beautifully browned edges.

A generous handful of arugula goes in for the last five minutes, and a simple tahini sauce with ginger syrup and lemon brings everything together. Sweet, fragrant, creamy—and so delicious.

Ayurvedic Perspective

Warm roasted sweet potato, fennel and shallot bring sweetness and softness to this meal, while ghee and tahini add richness and an oily, moistening quality. Coriander and cardamom offer aromatic spice, and the arugula contributes a bitter, peppery contrast. Lemon brings sourness, with salt rounding out the plate.

Through an Ayurvedic lens, this warm, substantial preparation may be especially grounding for Vata. The three tablespoons of ghee and tahini make it a rich serving, so portion size and individual digestion matter. Pitta may prefer modest black pepper and lemon; Kapha may enjoy a smaller portion with additional greens. These are qualities-based cooking considerations rather than a promise that one meal suits everyone.
